Origins, La Dehesa

In 2008, a couple formed by Pilar, a successful pharmaceutical in the world of pharmacy, and Ramón, a lawyer from a Spanish firm dedicated to the business world, met in the regions of Calatayud and Daroca, province of Zaragoza, Community of Aragon, in the so-called "Empty Spain" for its low population, a place where to invest some of their time and much of their limited resources on an initial project shared with two other couples of friends (Teresa, Marisa, José and Andrés). Together they formed the community that owns the Dehesa, today a large farm of scrubland, almond trees, vineyards, holm oaks and pistachios located on the slopes of the Jiloca river valley, which flows towards the Ebro through unique populations of the old Kingdom of Aragon loaded with history and biodiversity, although empty of many of the inhabitants that populated them until a few decades ago.

La Dehesa grew over the next following years and what initially was a free time project in a natural environment, without pollutants, clean air and starry skies ... evolved into the recovery of old almond trees, of old strains vineyards that remained there, "Pago de la Apothecary", "Valdespinar", "San Ramón" and the renewal of others as "Satoshi", "Hoya del Moro", Cruz del Caballero ".


Evolution: PAGO DE LA BOTICARIA, the crazy dream

The Community of La Dehesa maintains this wine-growing activity that is giving better results year after year. Ramón and Pilar wanted to further extend their winemaking passion and dedicate it much of their activity at this stage of their lives; they began to develop their "crazy dream".

After Pilar’s experience of making her first garnacha wine from old vines in the traditional and old fashioned way, with a surprisingly very good result, she fell in love with this incredible wine and these lands of old, healthy and self-regulated, ecological vineyards, which "magically" produced it with a very little intervention. Pilar devoted herself professionally to the world of vineyards and wine and completed the MASTER VITENO at the Higher Technical School of Food Agronomic Engineering and Biosystems of Madrid, ETSIAAB, directed and taught by internationally renowned specialists in viticulture, enology and enotechnics such as Professors Lisarrague, Suarez Lepe, Professors Baeza and López Díaz and many other extraordinary teachers and colleagues.

In parallel, Pilar and Ramón undertook their own viticultural project selecting more old vines and planting new vines where others had been planted years ago and were uprooted due to poor market approaches and unfortunate start-up subsidies. They also developed plants, including the so-called “Boti” clone, from grafts from the old vineyards in the field. Projects for the recovery of the “de las Chicas” vineyard, the “Banarros” vineyard, the “Sicilia” vineyard and the main project “la Falcona” were launched.

In these projects, contact with old farmers of the region and former winemakers such as the Langa family from Calatayud provided enriching support for this evolution towards a unique and own project: PAGO DE LA BOTICARIA.

The “La Falcona” viticultural complex should be, once completed, a meeting place for researchers and scholars of the vineyard and wine and a driving force for the revival of a region of great scenic beauty and natural wealth and geological and historical heritage. Rehabilitation of the two Towers will be completed in the first quarter of 2021 and will allow the development of these various viticultural activities.

The rehabilitation of the warehouse is also planned for 2021 and 2022 to house a winery with limited production, determined by the production of its own vineyards in order to produce these unique wines that deserve to continue to exist to the delight of those who drink them.

The complete digitization of the process to achieve the full guarantee of identity of our wines is in the DNA of our project.

The consolidation of another magnificent white garnacha wine, VIÑA SATOSHI, also made with natural procedures that give a "different" white, is another of the projects underway.

Continue loving and respecting Nature, promoting animal and plant biodiversity is our guide. Pests and damage to health only occur when we intervene aggressively.

Although in all these years we have followed sustainable agricultural processes, without using pesticides, herbicides or chemical fertilizers, we had never worried about the bureaucracy to accredit it until a couple of years ago. Therefore, after being audited by the Aragonese Committee for Ecological Agriculture CAAE, the 2021 harvest will be the first to be certified “eco”.

Our friends are the microbiota, the biodiversity of plants and animals, roe deer, Hispanic goats, wild boars, partridges, birds of prey and a long etc. that we have seen flourish after years of efforts protecting them together with our friends and community members of La Dehesa. We support them in the harsh days of cold and droughts. La Dehesa has become a small nature reserve, without public aid, only with effort and enthusiasm.

Our main asset are community friends, collaborators, such as Pilar Baeza and her team, José Ángel (soul of many of these realities, who firmly believed in "crazy projects", supporting us in hours taken from rest, always, from the heart ), Eduardo (a young farmer), Fernando, with his experience, and the wonderful people of these regions of Aragon, from whom we have only received support and encouragement. Worth the effort to contribute to the challenge against the depopulation of these wonderful regions that have won our hearts.

In the long cycle, we hope that some of our descendants or close people are attracted by these activities and find in them a recipe for happiness similar to ours.

Happy moments, happiness trapped in moments shared in the vineyards or in the winemaking process and synthesized in a bottle of wine. This has been and is our vision and mission.
